Chef Bruce Kalman and partner Marie Petulla, the duo behind critically acclaimed restaurant Union in Pasadena,
are proud to present (drum roll)…
Knead & Co Pasta Bar + Market to Grand Central Market.

They have taken the ethos of their neighborhood restaurant – seasonally Californian renditions of Northern Italian classics – to DTLA, this time making it more casual and accessible, but still maintaining their commitment to high, quality, local ingredients.

It’s simple really…handmade Italian food, made from scratch just like Nonna use to!

    Take a peak inside our on-site pasta lab and watch is all happen right before your eyes…pull a seat up to the bar for front row access or take a quick glance while passing by!

    Food lovers can purchase Kalman’s freshly-made pastas, sauces, cheeses and butter all made in-house and legendary giardiniere as well as an array of local and imported specialty goods.

Team Bios

BRUCE KALMAN

Born and raised in northern New Jersey, Bruce Kalman is a James Beard­ nominated chef and a partner in two restaurants, Union in Pasadena and the forthcoming Knead & Co. Pasta Bar + Market in Downtown Los Angeles. He began his career at a local pizzeria in New Jersey, and later attended a small hands­on culinary program at Hudson County Community College in Jersey City, NJ.

After school, Bruce cooked with Paul Bartalotta at Spiaggia in Chicago before taking on executive chef roles at Okno, Green Dolphin Street and Coco Pazzo. He then took on executive chef stints in Santa Fe (Il Piatto) and Phoenix (Chelsea’s Kitchen) before making a move to Los Angeles to open The Misfit in Santa Monica, serving farmer’s market­ driven fare, with a strong emphasis on Northern Italian and Mediterranean flavors and preparations.

He continued this tradition of hand­crafted cuisine as executive chef of The Churchill in West Hollywood, before starting Bruce’s Prime Pickle Co., a line of “vine to jar,” hand­packed pickled vegetables. His restaurant Union opened in 2014; Knead & Co. Pasta Bar + Market opened in early 2016.

Chef Kalman a James Beard nominated Rising Star Chef and has appeared on television shows like Food Network’s Chopped and Beat Bobby Flay, Esquire Network’s Knife Fight, Bravo’s Best New Restaurant.

In his spare time, Chef Kalman is the frontman in a chef cover band Foie Grock with DuffGoldman.

MARIE PETULLA

Marie Petulla is the owner of the newly opened Knead & Co. Pasta Bar + Market in downtown Los Angeles’ Grand Central Market, as well as the award-winning Union in Pasadena.

After living and traveling across Europe, the Chicago native got her start in hospitality management in 2001, with Nicole Parthemore and Dana Hechtman at She She in Chicago. After four successful years there, Marie moved to Los Angeles, where she worked as the GM of Firefly in Studio City. In 2014, she partnered with Bruce Kalman to open Union, an intimate 50-seat restaurant known for Northern Italian cuisine that showcases fresh, California ingredients. Marie’s sophomore project, Knead & Co., is a market-driven ode to classic Italian American favorites served in the bustling, accessible atmosphere of a downtown LA landmark. With nearly 15 years of front-of-house experience, Marie prides herself in delivering personalized service to every guest, fostering a family atmosphere among her team, and always serving incredible meals.
